Tom ‘Westy’ Westerland is a Welsh chef working as head Chef at Knipe Grill at Gilpin Lake House. Previously he worked as Head Chef at Ember for two and a half years. He also worked for Hywel Jones at Lucknam Park (1*) for five years, before becoming his right hand man and Head Chef at The Brasserie (2 AA rosettes) two years ago.

Westy is no stranger to titles, having previously won the National Chef of Wales award in 2018. He was a finalist for the Young National Chef of the Year in 2017/2018.

Westy cooks from the heart and believes that food should spark memories and make people happy. His food is fun and unique; he likes to take something classic and make it more interesting.

Tom Westerland is one of four chefs competing for the Wales region on BBC Two’s Great British Menu (2023). He will represent Wales alongside Georgia Sommerin, head chef at Home in Penarth, Mark Threadgill, head chef at Portmeirion Hotel and Simmie Vedi, former head chef at Bully’s in Cardiff, as the Welsh nation’s finest chefs battle it out in the hope of securing a place in the next stage of the competition.

This year’s competition is themed around the 65th anniversary of Paddington Bear. Westy’s menu draws inspiration from classic Welsh animations like Ivor the Engine.

This is his second time on the series. Having first appeared on Great British Menu in 2019,Westerland said: “Since my last appearance on the show, my cooking style has developed and changed a lot, as has the way I tackle the challenges.

“I have found a love for cooking over fire and the fun elements of food, which you probably didn’t see as much last time I was on the show. I’m looking forward to seeing what the viewers think of my dishes.”
