Mark Threadgill Biography – Mark Threadgill Wiki

Mark Threadgill is a Welsh chef working as head chef at Hotel Portmeirion. He describes his cooking style as modern Welsh based in the French classics, with influences from Japan.

As a determined 14-year-old, Threadgill wrote in his school report that he would like to be Head Chef at Portmeirion Hotel. He has been head chef at Hotel Portmeirion since 2012. During his time at the restaurant, they gained 2 AA rosettes, title of ‘The best hotel restaurant UK,’ and were featured in the Michelin, Hardens and Good Food Guide.

Prior to landing his dream job, he worked under the tutelage of Pierre Reboul at Restaurant Pierre Reboul, Chris Chown at PlasBodegroes and at Hibiscus for Claude Bosi.

Sustainability is at the heart of Mark’s approach to food. Born and bred in Gwynedd, he prioritises using Welsh homegrown produce to showcase his heritage. Mark has built up personal connections with suppliers across the North of Wales to help elevate his food to that next level.

Mark Threadgill Great British Menu

Gwynedd-born Mark Threadgill is one of the four chefs competing for Wales in BBC Two’s Great British Menu. The 2023 competition is inspired by animation and illustration celebrating Paddington’s 65th birthday. His menu is a nod to Welsh fantasy animation, both classic – The Tales of Mabinogion, and modern – Ben and Holly’s Little Kingdom.

With Welsh as his first language, and as a champion of Welsh ingredients, Mark is thrilled to be representing his home country in the Great British Menu Kitchen.

Threadgill returned to the competition in 2023 with even more drive and determination, to hopefully take him all the way this time round after being knocked out in a tie-break in 2022. The others returning include Georgia Sommerin, head chef at Michelin-starred restaurant Home in Penarth, and Tom ‘Westy’ Westerland, who developed his style at Michelin-starred Lucknam Park. They are joined by first-time contestant Simmie Vedi from Cardiff.
