Simmie Vedi is a Welsh chef and contestant on Great British Menu 2023. She is a sous-chef at KIN+ILK and former Head Chef at 2AA rosette Bully’s.

At the age of 23, Simmie Vedi decided to give up her study of law to pursue her real passion for cooking. She has no formal chef training, instead having learnt the ropes from her dad and honed her skills through experimentation and adoration of food.

After leaving law, her determination and refined palate helped her work her way up through kitchens, to finally land the prestigious job of Head Chef at 2AA rosette Bully’s in 2021. She remained there for eight months.

On how she started working in the hospitality world and where she trained to be a chef, Vedi told Women In the Food Industry: “I working in the food world seven years ago, I was 23. I started in a Marston’s pub, doing very basic food. I found this useful as I had no exposure to the food industry before. It eased me into a lot of very different roles and the process of how a kitchen worked. I gained a lot of skills in that first job and I had an amazing Head Chef. He was classically French trained. We were the Marston’s pub that won all the awards, everything was always cooked fresh. He really spurred on my passion for food.”

Simmie Vedi is representing Wales on Great British Menu 2023. She will represent Wales alongside Georgia Sommerin, head chef at Home in Penarth, Mark Threadgill, head chef at Portmeirion Hotel and Tom ‘Westy’ Westerland, who developed his style at Michelin-starred Lucknam Park.

Simmie’s cooking style is creative and clean with her focus being on small dishes that pack a punch of flavor. Sustainability is at the forefront of Simmie’s food, using local Welsh produce in all her cooking. Having been raised in Cardiff, she is a champion of Welsh ingredients that she believes are key to her cooking.

The four chefs competing for Wales will cook up canapes, starters and fish dishes inspired by animation and illustration celebrating Paddington’s 65th birthday.

Simmie’s emotional menu celebrates her obsession with video game Pokemon, drawing inspiration from her childhood and family.

On how Vedi prepared for the animation theme at GBM, she said: “Lots and lots of research online. With the theme of animation it’s something that really resonated with me. When I was a kid I wanted to be animator and wanted to draw. I was really good at art. I used to make story boards and would write really elaborate stories with the characters.

“So I tapped into those childhood feelings and those childhood memories of what animation meant to me. It was all about how I could put myself onto a plate using my emotions and the connection I have to animation.”

Speaking about how she got on Great British Menu, she said: “I had been approached a few times and I also know some of the competitors from previous years. I am a bit of a fan girl when it comes to chefs and I’ve sought out previous chefs. I’ve talked to them and built up relationships with some of them.

“When I was approached by one of the producers this time I felt more confident and we started the whole process.”
