Spencer Metzger is the Head Chef at The Ritz London. The Essex-born chef first entered the kitchen at the Ritz, aged 15, on a work experience placement. He joined the brigade there as an apprentice shortly afterwards, and worked his way up to sous chef.

In 2016, Spencer left to spend a year working at L’Enclume in Cartmel as chef de partie, before returning to The Ritz as premier sous chef in summer 2017. He was promoted to head chef in July 2021.

Spencer has had his fair share of success in competitive environments, winning the Roux Scholarship in 2019 at the age of 26 while working as Premier Sous Chef at The Ritz and being awarded The Caterer’s Acorn Award in July 2021, celebrating the industry’s brightest talents under 30.

As the winner of the 2019 Roux Scholarship, Spencer received £6,000, and an invitation to cook and train under the supervision of a leading chef at a prestigious three-star Michelin restaurant anywhere in the world for up to three months. Spencer’s choice was Restaurant Frantzén in Stockholm.

He said at the time via The Chefs’ Forum: “I was very happy with what I produced. I was a bit rushed and stressed at the end of the cooking time, but all the components were there and I was pleased with their flavours and the dish overall. I really don’t know where I’ll choose for my Stage, but I would want to go somewhere really different, maybe somewhere with a farm or something like that.”

Born in Essex, Spencer grew up in Chigwell, and first realised he wanted to be a chef when he was 15 after completing a two-week work experience at The Ritz under John Williams. From that point, he knew it was the career he wanted to pursue. Like many chefs who have qualified in the Roux Scholarship finals, Spencer trained at Bournemouth and Poole College.
