Ryan Stafford is Executive Chef at Fold Bistro in the heart of Marple Bridge. He appeared on Great British Menu in 2024 and MasterChef UK in 2008.
A Manchester native, Ryan is a graduate of the prestigious Cordon Bleu programme and has gained experience working for some of the biggest names in the industry. After graduating, he did stages at Trinity, Grosvenor Square, Maze, Angela Hartnett, The Boxwood, and Pétrus. He accepted a job at The Boxwood, working for Gordon Ramsay in 2007. He went on to work at Jamie Oliver’s Fifteen for four years.
Ryan’s extensive experience in the food world extends far and wide, having worked as a private chef for A-list celebrities like Anthony Joshua, to UK and US Presidents and even royal families – from the UK to the Middle East. He has cooked for four US presidents including Donald Trump, Barack Obama, George W. Bush and Bill Clinton.
In 2008, he decided to challenge himself in a new way and took part in MasterChef UK, reaching the semi-final. He was also awarded the title of “Young Chef of the Year” award: Gastronomy by the Seine, Paris that same year.
In 2010 Ryan went to work as a sous chef for Richard Cubbin at Alison Price, the lead caterer for the Government. After four years cooking for presidents, he went to work as a private chef for “an ultra high net worth family”, working between their houses in Miami, Courchevel in the French Alps and San Tropez, and on their yacht in the Mediterranean.
In 2022, Ryan decided to go freelance. He now holds the position of executive chef at Fold Bistro, where he showcases his culinary skills through a menu of seasonal sharing plates that pay homage to the North West region.

Manchester-born Chef Ryan Stafford is representing North West England on Great British Menu 2024 alongside Andrew Sheridan, Kirk Haworth and Nina Matsunaga.
“Very Excited to Announce That I’ll be Representing the North West on Great British Menu 2024,” Ryan wrote on Instagram. “I was like a kid in a sweet shop when I got ask to compete on this series. A very Prestigious Competition that I’ve watched all my idol chefs come through.”
Describing his cuisine as modern European, with a notable influence from Italian and Asian flavours, Ryan crafts dishes inspired by all his travels, and using only the best of seasonal ingredients.
He’s also very used to working to a brief. He hopes to incorporate some of the most memorable moments from the Olympics and Paralympics into his menu – adding a touch of excitement and celebration to his creations.
