Tom Shepherd is a chef and owner of Upstairs by Tom Shepherd, a Michelin-stared restaurant based in Lichfield, Staffordshire. The Birmingham-born chef opened the acclaimed eatery above his dad’s business, City Jewellers, in Bore Street, Lichfield, in October 2021.
Tom began his career at the New Hall Hotel in Walmley. He worked as a sous chef with Michael Wignall at The Latymer (2) before landing a job as Development chef at Restaurant Sat Baines (2). In addition to working at Sat Bains and The Latymer, he was also Sous Chef at The Samling in 2013 when they were awarded their first Michelin Star.
His first head chef role was at Michelin-starred Adam’s Restaurant in Birmingham. He stayed there for two and a half years, during which he oversaw the successful retention of the restaurant’s Michelin Star and three AA Rosettes
In 2018, he was awarded the Acorn Award which celebrates the top 30 under 30 in the hospitality industry. He went on to open his own restaurant, Upstairs by Tom Shepherd, in Lichfield in 2021 and was awarded a Michelin Star just four months after opening. Upstairs by Tom Shepherd is Staffordshire’s first and only Michelin-starred restaurant.
In 2023, Tom appeared on the BBC’s Great British Menu representing the Central Region. He competed against some of the UK’s best-known and most renowned chefs. Tom celebrated Desperate Dan as part of the series’ overall theme of illustration and animation. The illustration was a much-beloved character during Tom’s childhood. Tom won the main course round, a fantastic achievement to be recognised for creating the Banquet’s “main event” dish, which was held at The Royal Pavilion, Brighton.

The series’ theme celebrated animation and illustration for Paddington Bear’s 65th Birthday. He went on to win the main course round and cooked at the Banquet where he served his infamous take on Desperate Dan’s Cow Pie. The Pie was inspired by Tom’s childhood favourite cartoon, Desperate Dan, illustrated by Dudley D. Watkins who studied at Nottingham’s School of Art.
Early Career
Tom, from Sutton Coldfield, moved to Lichfield when he was 11 as an only child with parents Paul and Sara. He did not take the usual route to becoming one of the top chefs in the country after finishing secondary school at The Friary.
He told StaffordshireLive: “There was no romance behind my passion for food. You hear about people who baked scones with their nan at 11, but that just wasn’t me. I was very much only interested in sports as I grew up and am a big Aston Villa fan. I could foresee no future in sport, though, so I quickly changed to hospitality, because I was working at the George Hotel aged 15 or 16 as a pot washer part-time.
“[Tom] then actually got headhunted by someone at the George Hotel and was told that there was a job opportunity at the New Hall in Walmley, which is back where I grew up.
“There was then a trainee manager position which was offered to me and I couldn’t believe how natural I found cooking, having no interest in it, but the camaraderie and environment suited me so well.”
