Caroline Martins is a Brazilian chef and founder of the Sao Paulo Project & SAMPA. She is representing the North West region on Great British Menu 2023. She previously represented the North West region on Great British Menu 2022, as well as competed on MasterChef Brazil.

Caroline spent over a decade working as a plasma physicist before giving up a scientific career to pursue the lifelong dream of becoming a professional chef. That journey began by taking part in MasterChef Brazil, which led to Caroline gaining a significant fan base in her home country. She then moved to London to obtain a diploma at the esteemed culinary school Le Cordon Bleu.

She said: “I moved to London and paid for myself to study at Le Cordon Bleu. I had one small suitcase and lived out of that for six months. I did an intensive course of what would normally be two years in six months, starting at 7 am and finishing at 11 pm to get all of the condensed training. My life was just being at school but I loved it.”

After that, Caroline worked in some of the finest restaurants in the world, including positions at Kitchen Table at Bubbledogs (2 Michelin stars), Trenkerstube at Hotel Castel (2 Michelin stars), Galvin La Chapelle (1 Michelin star) and Pied à terre (1 Michelin star).

After moving to Manchester in early 2020, with government regulations causing restaurants to close, she worked as a private chef for various public figures.

Between January and October 2022, Sao Paulo by Caroline Martins held a residency at Blossom Street Social in Manchester’s trendy Ancoats district. Caroline offered a regularly changing small plates menu and a 12-course tasting menu, showcasing the best locally-sourced ingredients alongside traditional Brazilian flavours to bring truly unique British-Brazilian fusion dishes to Manchester. Met with favourable reviews from diners and the media alike, the response was fantastic, leading Sao Paulo by Caroline Martins to be nominated as ‘PopUp of the Year’ by the prestigious Manchester Food and Drink Festival Awards. Not only that, Caroline was also nominated as ‘Chef of the Year’, alongside the best chefs in the city.

The demand for Caroline’s Brazilian-British fusion concept has been continuously growing since then, and in November 2022, SAMPA was born! SAMPA is the nickname Brazilians give to the city of Sao Paulo – A perfect correlation that reflects a laid back spin on the previous fine-dining concept.

SAMPA’s menu focus on small plates designed to be shared. With a passion for championing Brazilian cuisine in the UK, small, local suppliers are at the core of the menu. SAMPA is currently in residency at Blossom Street Social.

Caroline Martins is one of four chefs representing the North West region on the Great British Menu 2023. The series is dedicated to British animation, and devised to celebrate the 65th birthday of Paddington Bear. To celebrate the theme, she is creating imaginative plates based on her favourite British animations, Postman Pat and Wallace and Gromit.

The Manchester-based chef wrote on Instagram: “I’m incredibly proud to be returning to Great British Menu this year! Representing the north-west is an honour, and I look forward to showcasing ingredients from small Mancunian suppliers. I’d also like to thank the team at GBM for allowing me to show my Brazilian ingredients and techniques, it was such a fun and worthwhile experience.”

Martins is joined in the kitchen by Danielle Heron, co-owner of Prestwich restaurant Osma, known for its Scandinavian-influenced menu. The third chef appearing on the show is Sam Grainger, and though he’s better known for his work in Liverpool, he’s been working in Manchester since 2022. Grainger is one of the team behind hit Liverpool restaurants Belzan and taco spot Madre.

Martins appeared on the Great British menu on series 17 of the show in 2022, though her dishes didn’t make it to the show’s final banquet.
