Lottie Noren, born Charlotte Noren, is Chef Patron at Edo, a modern Spanish tapas restaurant in the heart of Belfast City Centre. She is a contestant on series 19 of Great British Menu on BBC Two.

For the past four years, she has been an integral part of the team behind Edo. The menu features small plates influenced by the best ingredients and cooking techniques from across the world.

Edo was awarded a Bib Gourmand in 2023 from the prestigious Michelin Guide, as well as the ‘Best Restaurant in Northern Ireland’ award. The Bib Gourmand recognises those restaurants that offer high-quality food at affordable prices, without sacrificing quality.

Lottie was inspired to become a chef after eating at l’Enclume at age 16, starting her first kitchen job as a porter that same year. Having caught the bug working in kitchens, Lottie asked for a job at the local luxurious 4* hotel called The Swan at Newby Bridge, where she started work as a commie chef.

Lottie gained experience working at restaurants around the country from Hadskis in Belfast, under Niall McKenna, to the renowned Old Swan at Minster Lovell in the Cotswolds.

Lottie’s goal is to showcase the breadth of culinary expertise acquired throughout her career, and hopes with her menu to celebrate the best of the place she calls home, Northern Ireland.

Speaking about the Olympics theme of the competition, Lottie told Women in the food industry: “Preparing for the theme Olympics was challenging especially not knowing too much about sport but with a good bit of research I found myself really enjoying educating myself about the history and talent we have here in the UK. And I felt proud to be showcasing the Olympics.”
