Lewis Dwyer is a Welsh Chef. He is Head Chef/Joint Patron at Hiraeth, a small independent restaurant offering a set menu lunch and taster menu opposite the leafy Victoria Park, Cardiff. He competed on BBC’s Great British Menu in 2024 and 2025.

Born and bred in South Wales, Lewis worked in several restaurants before recently co-opening his own, Hiraeth. Having started as a pop up restaurant in early 2020, Hiraeth re-opened in November 2022 after a successful £30,000 crowdfunding campaign. The restaurant is focused on quality seasonal produce.

Lewis and business partner Andy Aston launched a Kickstarter to raise money to open Hiraeth and they exceeded their target allowing them to open their restaurant. Having hosted several pop-ups, and now having a permanent home, they’re able to cook their own food and celebrate seasonal Welsh produce.

Japanese flavours and techniques have always been a big influence in Lewis’s cooking, and even more so since he visited the country in 2019. Japanese cooking with quality Welsh ingredients is at the core of Lewis’s restaurant menus.

Hiraeth was added to the Michelin Guide Great Britain & Ireland in July 2023, only eight months after the launch. Also in 2023, the restaurant was presented with the AA Resotte Award for Culinary Excellence and was featured in The Good Food Guide.

Chef Lewis Dwyer is a contestant on 20th series of the Great British Menu. He will be competing in the Wales region of Great British Menu 2025, alongside Ayesha Kalaji, Chef Patron/Owner, Queen of Cups; Daniel Ap Geraint, Head Chef, The Gunroom Restaurant; and Seb Smith, Head Chef, Allt Yr Afon.

His competition menu is a diverse celebration of Welsh history.

Great British Menu 2024

Chef Patron Lewis Dwyer was a contestant on Series 19 of the Great British Menu alongside Corrin Harrison, Nick Rudge and Larkin Cen. Four chefs competed for Wales with dishes inspired by the Olympics and Paralympics, all hoping to cook at a banquet to wish Team GB athletes luck as they head for Paris 2024. His menu celebrated legendary Welsh Athletes.
