Nick Rudge, born Nicholas Ieuan Rudge, is a Welsh chef and contestant on the Great British Menu 2024. He is the head chef and owner of The Jackdaw, a restaurant in the heart of the castle walled town of Conwy.
Like many aspiring restaurant chefs, Nick grew up watching great television cooks such as Gordon Ramsay, Jamie Oliver, and James Martin on Saturday Kitchen. His catering career started at Llandrillo College in Rhos on Sea. During his three years at college, he took on many different job roles in the area to progress his knowledge and skills.
After college, Nick was lucky enough to stage at Heston Blumenthal’s Three Michelin Starred The Fat Duck. He then secured a permanent position as Commis Chef at the age of 19.
At The Fat Duck, he progressed through the ranks from Commis to Junior Sous Chef. He also had an 8-month relocation to Melbourne. He came up with the idea and concept for ‘The Jackdaw’ during the COVID lockdowns.
The Jackdaw is a casual dining restaurant which has a tasting menu that Nick changes with the seasons. Nick named the restaurant in honour of the people who were born in the walls of Conwy, who were called Jac-do’s in Welsh.
The Jackdaw Conwy won the AA Hospitality Restaurant of the Year Wales Award 2023/24. The restaurant was also featured in the 2023 AA Restaurant Guide, along with only one other establishment in Conwy County to be awarded 3 Rosettes.
Nick takes traditional Welsh cooking and brings it into the modern age with his learnt techniques and plating. He is a fisherman and, in the summer, loves going out fishing for sea bass and mackerel.

Nick Rudge, head chef and founder of The Jackdaw in Conwy, is competing on Great British Menu 2024 alongside Corrin Harrison, Lewis Dwyer and Larkin Cen. They hope to cook at a banquet to wish Team GB athletes luck as they head for Paris 2024.
He announced the news on Instagram, writing: “It’s an absolute honour to have been asked to compete on this year’s Great British Menu, competing to represent Wales. Some great competitors and top chefs.”
Nick’s menu is a celebration of Team GBs Medal winners, paying homage where he can to Welsh athletes.
