Steve told the BBC about his earliest cooking memory: “I always remember when I was younger, I would bake flapjacks and different types of tarts at Christmas time with my mum and my aunt. I think my fondest cooking memory is watching my mum make spaghetti bolognese. I always remember me and my brother would wait it had been stewing long enough for us to dip a piece of bread into the sauce. I think most of the family looked forward to this as most of the bread in the house disappeared on days she made it.

I also remember when I was old enough to start cooking on my own, I tried to make some sort of garlic chicken and took the garlic element to the extreme by putting a whole bulb of garlic on a couple of chicken breasts. To say the least, vampires would not visit that night!”

Steve has multiple cooking styles. He said: “I like to attempt making fine dining desserts. I also love to put my own twist on British classics and fusing them with Asian flavours. I also like using whatever I have on hand to conjure something tasty from the simplest of ingredients and not waste food.

I am not 100% sure where all my inspiration comes from, but over the years I have come to appreciate the styles of the creative chefs like Heston Blumenthal, or the classic British style cooking and skill of Tom Kerridge.”
