Sebastian ‘Seb’ Smith is head chef at Allt Yr Afon Restaurant at Wolfscastle Country hotel in Haverfordwest, Wales. He was recently awarded 3 AA Rosettes for his incredible work at Allt-Ayr-Afon Restaurant. He is a contestant on BBC’s Great British Menu 2025.
A Neath native, Seb moved to the South of England to pursue his passion and gain experience in restaurants. He has trained at some top hotel restaurants in England such as Stoke Park in Buckinghamshire, Great Fosters in Surrey and Oakley Hall in Basingstoke.
Seb is now spearheading the team at the Allt Yr Afon, bringing his signature bold flavours to their tasting menu. His signature tasting menu is all about bold flavours and clean presentation. It is a harmony and balance between modern and classic techniques, with the service to match.
Having not been introduced to dining out at restaurants as a young person, Seb now feels passionately about making dining out accessible to the masses and tries to price his menus reasonably.
“Fine dining should not just be for the affluent and elite, it should be accessible to all. I strive to provide outstanding food at a reasonable price, as food should be shared and enjoyed by all,” he said. “It is one of the few things in life that connects every one of us and binds us to so many memories. A smell or taste can transport us back to any time or place.”
“For me it’s all about that central ingredient and then every other component elevating it off the plate. The product should speak for itself, quality is paramount and without it we have nothing. I want every one of my guests, from the first bite to the last, to leave with a smile on their face and new memories created and shared.”

Head Chef Sebastian Smith is taking part in BBC Two’s Great British Menu 2025. He is one of the four chefs representing Wales in the competition alongside Anglesey-raised Ayesha Kalaji, Chef Patron/Owner at Queen of Cups; Prestatyn-born Daniel Ap Geraint, Head Chef at The Gunroom Restaurant; and Lewis Dwyer, Head Chef/Joint Patron at Hiraeth Kitchen.
