A James Beard Foundation bootcamp alum originally from Quito, Ecuador, chef and mixologist Paula began her culinary career in her home country of Ecuador at 18 years old. A 13-year veteran of the industry, chef Paula has built an impressive resume that includes specializing in avant-garde cuisine at the Basque Culinary Center in San Sebastián, Spain, working at a nomad restaurant concept in Quito where she collaborated with Amazonian farmers, to opening her restaurant Roots in Jonesboro, Arkansas that blended her Ecuadorian flavors with fresh local ingredients.
Passionate about sustainability and strengthening the community-driven food infrastructure, Paula uses regional ingredients to showcase her cultural heritage through her unique, inventive dishes.
She is currently the executive chef at two restaurants: Granddam, the flagship restaurant featuring culturally inspired Bluegrass Cuisine, and Lost Palm, the rooftop drinking parlor that boasts an impressive array of Latin inspired share plates, located at the Gold Key Awarding-winning boutique The Manchester in Lexington, KY.

Executive chef Paula Endara is a contestant on Season 22 of Bravo’s hit series “Top Chef,” hosted by Kristen Kish. For Season 22, the prestigious culinary series will highlight much of the rich cooking scene in Canada, from Toronto to Calgary, Montreal, and Prince Edward Island.
In a social media post, The Manchester Hotel said: “Our very own Chef Paula Endara will be hitting the screen in the new season of Bravo’s Top Chef as they head north to Canada! The season premieres on March 13th, and we’ll be cheering her on from Lexington every step of the way — we continue to be so proud and lucky to have her at our culinary helm.”
The contestants have the chance to win $250,000 provided by Saratoga Spring Water and a $125,000 flight credit to spend on travel with Delta Air Lines. Plus, the winner will get a feature in Food & Wine Magazine and make an appearance at the Food & Wine Classic in Aspen. The first-place finisher will also headline a dinner at the James Beard house in New York City and have the chance to present at The James Beard Restaurant and Chef Awards in Chicago, Illinois.
