Oscar Diaz is an award-winning chef and a contestant on Bravo’s Top Chef. He is currently the chef and owner of Little Bull, AAKTUN, and TaTaco in Durham, NC. A two-time James Beard Award semifinalist for Best Chef Southeast, Oscar Diaz was born and raised in Chicago as the child of first-generation Mexican immigrants.
Growing up surrounded by diverse flavors shaped his bold, multicultural culinary style blending his Mexican heritage, global influences, and Southern soul. After training in Michelin-starred kitchens across Las Vegas, Los Angeles, and Chicago, he landed in Raleigh, N.C., where he helped to launch Cortez Seafood + Cocktails.
In 2023, Oscar opened Little Bull in Durham, which recently earned a Michelin Guide recommendation and features an American melting pot of flavors. His second restaurant AAKTUN opened in 2024, pushing Latin American flavors. Oscar’s latest project and third restaurant, TaTaco is a mercado-inspired eatery in Durham.
Known for his fearless creativity and high-pressure skills, Oscar was featured in Time Magazine in 2018 as a chef defining fusion cooking in the “Nuevo South.” Next came James Beard Award honors as a semifinalist for Best Chef: Southeast in 2019 and again in 2022.

Durham chef Oscar Diaz is among the competitors on Season 23 of Bravo’s “Top Chef,” hosted by Kristen Kish. He’s also one of two competitors from North Carolina on the hit reality TV show — filmed last fall in Charlotte and a few episodes in Greenville, SC, to create “Top Chef Carolinas.” The other one is Brittany Cochran of Charlotte, the executive chef at Stagioni – Four Seasons of Food.
The show’s announcement said: “This season will showcase the finest in southern hospitality, embracing the rich history, agriculture, and outdoors, as a new batch of accomplished and renowned chefs vie for the ultimate Top Chef title.”
