Monique Feybesse is a Filipino-American chef and owner of Tarts de Feybesse. She co-runs the Oakland-based patisserie Tarts de Feybesse with her husband Paul Feybesse. She was featured in Bravo’s Top Chef Season 19 as one of the cheftestants in 2022 and winner of Food Network/Cooking Channel’s Battle of the Decades (Episode 8, 2023).

A San Francisco native, Chef Monique Feybesse began her career in 2007 when she graduated from the California Culinary Academy and joined the opening team at Madera restaurant at Rosewood Sand Hill and at Masa’s in San Francisco.

In 2013, she booked a one-way ticket to Copenhagen and earned a position at Geranium Restaurant under Bocuse d’Or Legend Rasmus Kofoed. She later relocated to Paris as part of the opening team of Chef Yannick Alleno’s Pavillon Ledoyen, which earned three Michelin stars within their first year.

Her resume also includes Atera in New York and Ninebark in Napa Valley, under Chef Matthew Lightner. After moving back to the Bay Area to start a family in 2016, Monique became Chef de Cuisine of Cavallo Point’s Murray Circle restaurant later leading the culinary department at Robert Sinskey Vineyards.

I can still remember cooking dinner for the first time for you and also hopping on the back of your bike because I was so terrible riding my own in Denmark. I remember fixing a broken hollandaise sauce too, and I’m pretty sure that’s when I hooked you but you’d probably disagree.

Chef Paul Feybesse hails from Paris and the Lozere region of France where he attributes his love for food and cooking. In 2009, he joined the star team at Le Meurice when led by Yannick Alleno, his future mentor, opening Cheval Blanc Courchevel and after helping lead the team at Alleno au Pavillon Ledoyen to their first three Michelin stars in 2014.

He has also trained under some of the most acclaimed chefs in the world such as Rasmus Kofoed at Geranium in Copenhagen and Alain Ducasse in Louis XV in Monaco. In 2015, Paul won the title as San Pellegrino Best Young Chef in France and was a finalist for San Pellegrino Best Young Chef in the world. Most recently, he has worked under Corey Lee and Brandon Rodgers at In Situ in San Francisco.

In 2025, Monique earned a spot as a semifinalist in the prestigious James Beard Awards and was recognized in the Outstanding Pastry Chef category.
