Mark McCabe Biography – Mark McCabe Wiki
Mark McCabe is a chef and contestant on Great British Menu 2025. He is the head chef at Henrock, a seasonally-minded restaurant by Simon Rogan. He was a contestant on Great British Menu 2023. In 2024, Mark was a finalist in the National Chef of the Year competition.
Mark worked at Hugh Fearnley-Whittingstall’s River Cottage, before becoming Head Chef, and later co-owner of The Ethicurean in Somerset, which garnered a green Michelin star. Since then he has moved to Windermere in the Lake District to head up Simon Rogan’s Henrock restaurant.
Hailing from a small village called Tannadice, about 20 miles north of Dundee, Mark was first inspired to get into cooking by his mum – who had previously owned a restaurant. Throughout his childhood, she was always cooking or foraging for ingredients.

Mark McCabe is competing in the 20th series of Great British Menu, hoping for a chance to serve their dishes at a banquet celebrating great Britons of the past. He is representing Scotland alongside David Millar, Calum Munro and Hannah Rose.
Mark is passionate about Scotland, and about some of the people who have had such an impact on the country’s history. He hopes to show this in his dishes. Local produce and sustainability is at the forefront of Mark’s food. His cooking style is incredibly creative, seeing food as a completely immersive experience – from garden to plate.
“I’ll be taking part in @greatbritishmenu again this year,” Mark announced on Instagram. “I’m so happy to have been given another opportunity to cook in that special kitchen and to be able to represent Scotland once more.”
“This season has been incredible already and I don’t doubt the competition is going to be fierce as we all strive to get a dish to that 20th Anniversary (!) banquet.”

Mark McCabe competed in the Scottish heat of The Great British Menu 2023 alongside chefs Kevin Dalgleish, Head Chef at Amuse, Tunde “Abi” Abifarin, Head Chef at Farin Road, and Adam Handling, an Award-winning Restaurateur.
The theme for series 18 of the BBC show was animation and illustration celebrating Paddington’s 65th birthday. Mark attended school in Kirriemuir, where Peter Pan author J. M. Barrie was born. For his menu, he took inspiration from the illustrated works of Peter Pan to celebrate the author who holds a special place in his heart.
Speaking about his time on the show, Mark said at the time : “I’m delighted to have been asked to take part in Great British Menu and proud to be representing Scotland where I was born and brought up. I still can’t quite believe it!
“It’s my first year in the competition, and the theme of Animation and Illustration couldn’t have been better. I had so much fun coming up with dishes that reflected some of my favourite childhood stories.
“Having been Head Chef at The Ethicurean for 4 years now, I felt it was the right time to push myself a little further and see what I could achieve, but I couldn’t have done any of it without the support of the team at the restaurant and Matthew, my business partner who helped in any way they could.”
