Laurence Louie is a Chinese-American chef and contestant on Top Chef 2026. He is the chef/owner of Rubato HK Café, a Quincy-based restaurant known for bringing a modern and personal take on Chinese American cooking. He emerged victorious in the Food Network’s Chopped in 2024 in the aptly named episode “A Little Taste of China.”

Laurence earned a Master’s in American Studies from the University of Massachusetts Boston in 2011. After working as a community organizer for a nonprofit that served the Chinese community in Boston’s Chinatown during the first years of his career, Laurence took an extended trip to China where he studied Mandarin, joined the university basketball team and apprenticed at a hand-pulled noodle shop. It was in Southern China, where he rediscovered a connection to the food of his heritage.

Prior to cooking full-time, he dabbled as a cook and co-owner of Olio Culinary Collective, a worker-owned catering group. Upon returning to the United States, he decided to pursue a professional career in the kitchen, landing a job at the James Beard Award-winning Ana Sortun’s flagship restaurant, Oleana, in Cambridge, Massachusetts, where he rose to Junior Sous.

While staging in notable kitchens across London, he worked under acclaimed Chef Selin Kiazim, eventually becoming Head Chef at her flagship restaurant, Oklava. During the pandemic, he received a call from his mother about taking over her Cantonese bakery and decided to move back to the States to figure out what to do with the space.

Rubato

In 2022, he opened his restaurant Rubato, a Hong Kong-style cafe blending his Chinese-American roots with refined technique. Since opening Rubato, Laurence was named a semifinalist for the prestigious James Beard Award for Best Chef of the Northeast in 2024, was awarded StarChefs Boston Rising Star Chef and the restaurant was named on Bon Appetit’s 2023 Best New Restaurants.
