Daniel Ap Geraint is head chef of The Gunroom Restaurant at Plas Dinas Country House in Caernarfon, North Wales. He will represent Wales on the Great British Menu 2025.

Food was a huge part of his upbringing, and he was particularly influenced by his Nain (Welsh for grandmother), whose cooking was wholesome and full of flavour.

Daniel has always been creative, and when he left school he went on to study Music, Theatre and Media. However, after working in a kitchen during his university summer break, he realised that his real passion was for working in kitchens.

He went on to work at an award-winning gastro pub near Llandudno, before becoming head chef for the first time at only 23 years of age. A few years later Daniel took the plunge and opened his own restaurant, which was quickly added to the Michelin Guide and The Good Food Guide.

In 2018, Daniel joined the team in The Gunroom kitchen with a view to developing their offering. Changing the menu every month to reflect the most abundant produce from the local area, and creating a unique nine-course hybrid taster menu that he has become so known for.

During his time in charge of the kitchen, the restaurant has received a number of awards and recognitions including being added to the Michelin Guide in 2022, gaining two AA rosettes and winning the AA Wine List Award for Wales 2024/25.

Welsh Chef Daniel Ap Geraint is married to his wife Mari Geraint. They co-owned Blas restaurant, which was named North Wales Restaurant of the Year in the Food Wales Awards 2015. The award winning eatery closed in March 2017.

Head Chef Daniel Ap Geraint is a contestant on the 20th series of the BBC’s Great British Menu. He will compete in the Welsh heats alongside Ayesha Kalaji, Lewis Dwyer, and Seb Smith. The winner will make it through to the Great British Menu banquet 2025 to be held at Blenheim Palace.

“I am honoured to be representing The Gunroom Restaurant and Wales in the 20th Anniversary series of Great British Menu, a programme that has showcased culinary excellence to the world for over 20 years,” the Great British Menu contestant said. “What an experience to be part of a programme that so many aspirational chefs hold in such high regard.”

This year’s theme is ‘Great Britons’ and the show itself is renowned for having made household names of some of the UK’s top chefs over the last two decades, including Marcus Wareing, Tom Kerridge, and Simon Rogan. Celebrating seasonal Welsh produce is at the heart of Daniel’s cooking, and every dish he cooks in the competition is representative of this.
