Kevin Dalgleish is a Scottish chef and Chef Patron of Amuse by Kevin Dalgliesh on Queen’s Terrace, Aberdeen City. He took part in the Great British Menu in 2023 and 2024.

Kevin began life as a chef in his hometown of Hawick, before continuing his career as an apprentice at The Savoy Hotel, London under Chef Anton Edelmann for six years. After his time in London, Kevin moved back to Scotland and worked in some of Scotland’s top hotels and restaurants, including 10 years at the exclusive Ackergill Tower.

In 2012 he moved to Aberdeen to open up The Chester Hotel (2AA), placing it firmly on Scotland’s fine dining scene with winning New Restaurant of The Year 2016 and winning him Head Chef of the Year 2015 and Executive Chef of The Year 2017. At The Chester, he helped create ‘The Signature Event’ and hosted the likes of Phil Howard, Daniel Clifford, Roy Bret, Glynn Purnell and Richard Corrigan.

At the start of 2022, Kevin took over Amuse Restaurant. He wanted to create a relaxed, friendly environment using local seasonal ingredients with French soul! Amuse is Michelin-recommended and has 2 AA Rosettes.

Kevin Dalgliesh is a contestant on Series 19 of Great British Menu, presented by Andi Oliver. This year’s theme is the Olympics and Paralympics.

Speaking ahead of the show, Kevin said: “This year’s brief was The Olympic and Paralympics, which was so much fun to play around with, and tie into Scottish sporting history. I’m looking forward to people seeing my creative interpretation of the theme through dishes that showcase Scotland’s natural larder.”

As he returns to the Great British Menu kitchen, Kevin expresses his excitement: “It’s always a challenge under the pressures of the lights and cameras, and such a world away from my kitchen in Aberdeen. But I’m ready to showcase what Scotland has to offer.”

Kevin is representing Scotland alongside a lineup of culinary talent including Calum Montgomery, chef-patron at Edinbane Lodge; Ajay Kumar, chef-patron of Swadish by Ajay Kumar, and David Millar, executive chef at Jupiter Artland.

Chef Kevin Dalgleish, from Aberdeen, made his debut on BBC’s Great British Menu TV show in 2023. He was one of the Scottish chefs in the 18th series of the Great British Menu alongside Dundee-born restaurateur Adam Handling, who owns Michelin-starred Frog in London; Mark McCabe from Tannandice who is chef proprietor of The Ethicurean in Somerset, and Nigerian-born Tunde “Abi” Abifarin, head chef at Farin Road in Edinburgh.

The theme of the BBC Two series was British animation and illustration with the show presented by Andi Oliver and judged by Michelin-starred chef Tom Kerridge, Mowgli mogul Nisha Katona and comedian Ed Gamble. His first venture into the GBM kitchen saw him cooking dishes based on the Scottish comic strip Oor Wullie.

Speaking ahead of the show, Kevin said: “I’ve been a huge fan of Great British Menu ever since it first aired and am incredibly honoured to have been asked to represent Scotland this year.

“I’m up against some seriously talented Scottish chefs and I’m really looking forward to everyone at home watching my journey on the show.

“This year’s brief was British animation and illustration, which was a joy – it brought back lovely memories of my childhood in Hawick. I can’t wait for people to see my interpretation of the theme through the dishes that I created to showcase Scotland’s natural larder.”
