Callum Leslie Biography – Callum Leslie Wiki
Callum Leslie is the Executive Chef at The Black Swan at Oldstead on the edge of the North Yorkshire Moors between Byland Abbey’s historic ruins and Kilburn’s White Horse. He is a contestant on the BBC cooking show Great British Menu 2025.
Callum grew up in Holmfirth, West Yorkshire. At the age of 13, he started working at a local pub as a kitchen porter, and realised that he wanted to pursue a career as a chef. By 16 he was working at the popular Huddersfield restaurant The Three Acres in Shelley.
When Callum turned 18, he started working at the Michelin-starred Box Tree restaurant in Ilkley, before going to Midsummer House in Cambridge which is renowned for its fine dining, and the two Michelin-starred The Berkley.
Callum has also worked at the two Michelin-starred Restaurant Sat Bains in Nottingham. He also spent a year as chef de partie at acclaimed British chef Marcus Wareing’s Michelin-starred restaurant Marcus in South Kensington, London, and had a brief spell at The Woodman Inn at Thunderbridge in Huddersfield when it was owned by his family.
He then returned to Yorkshire, working for Veteran Tommy Banks at his Michelin starred restaurant – The Black Swan in Oldstead, where he started as sous chef. Callum was appointed Head Chef at the Black Swan aged 26, and was then made executive chef in 2024.
Callum is also executive chef at The Abbey Inn, a 19th century inn transformed in 2023 into a cosy, relaxed 70-cover country pub overlooking Byland Abbey. Both restaurants are owned by chef Tommy Banks who has won Great British Menu three times.
The Black Swan
The Black Swan was taken over by the Banks family in 2006 after farming in the Oldstead area for generations. Its 160-acre farm and three-acre kitchen garden drives everything the restaurant serves, according to Huddersfield Hub. The restaurant was awarded a Michelin Green Star in 2020 to recognise the family’s commitment to sustainable gastronomy.

Executive chef Callum Leslie is married to his wife Eve Leslie. She is a marketer at the Grantley Hall, an award-winning 5 star hotel and spa in North Yorkshire.
Callum and Eve married in September 2023. During their first anniversary, Callum said: “A whole year of marriage already! What a year it’s been Eve Leslie. I’m so proud to call you my wife, I love you so much.”
Callum Leslie Great British Menu
29-year-old Callum Leslie is one of the chefs competing in the 20th anniversary series of Great British Menu, all hoping for a chance to serve their dishes at a banquet celebrating great Britons of the past.
He will be competing in the North East and Yorkshire heat alongside Scott John-Hodgson, head chef at Solstice, Minal Patel, head chef at Prashad, and Ahmed Abdalla, head chef at The Legacy at the Grand, York.
He announced the news on Instagram, writing: “I am so excited to finally share that I am representing Yorkshire & the North East region on this year’s @greatbritishmenu.
“As a proud Yorkshireman, it has been a long time goal of mine to compete on the show and I’m even more proud to be part of their 20-year anniversary cohort.”

Chef Callum Leslie appears to have a damaged right ear. He has not revealed whether it is as a result of an accident or a disability. He is fond of posing for photos with his face tilted to the right, showing his left ear and hiding the right ear.
